hehe. today was kinda rough. had two parties of 40 and a party of 20 come in without reservations. i had a complete O_O face the entire time. 100 appetizers, 100 soups, 100 salads, 34 ny strip steaks, 40 lamb osso bucco, 6 vegetarian, 20 Sauteed chicken, 30 creme brulees, 60 tiramasus, and 10 specialty desserts................

heehee. time for a new recipe ^_^

UPSIDE DOWN CAKE TIEM ^_^


Butter 12oz
Sugar 13oz
Salt 0.12oz (about 2/3 tsp)

Eggs 8.25oz
=============================
Cake Flour 15oz
Baking Powder 0.62oz (about 3 3/4tsp)
Milk 9oz
Vanilla Extract 0.25oz
Orange Flavor 0.12oz

Preheat oven to 360 degrees F. Place your butter, sugar and salt in a clean
mixing bowl and beat with paddle attatchment until combined and smooth, Add your eggs one at a time until they're incorporated. Add your vanilla, Orange Flavor and Milk. Sift the remaning ingredients together and add to the bowl until batter-like. Line off a cake pan or sheet tray with parchment paper and butter it. arrange whatever fruit you would like on the cake (it goes very well with peach slices ^_^) and then pour the batter on top. bake until its nice and golden brown. To test for doneness, poke a skewer into the cake and remove it, if it comes up clean, then its done. as soon as you pull it out of the oven, unmold it from the cake pan onto another pan or a plate.
