You could have multiple characters swap between each other, actually, have a whole plot of how two characters attempts at swapping back just fail as more people get involved, using magic, mad science and other means to set things right only for everyone's bodies to get mixed up even more.

I was thinking of something non swap related though, TF into a character and having to adjust to their life sort of thing

Imo the coolest shut would be not even proper mind swap but when characters switch their species, gender and body build, or just one or two of those aspects.
