For future commissions, I'm going to require everyone that commissions me give me a deadline. For some reason I just can't work efficiently without one. Even if I wait until the last minute before the deadline and finish it the night before, i'm still getting it done.

If someone doesn't have a deadline to give you, you tell them when to expect to have it by (remember to add 50% to the execution time for Shit Happening™).
That way there's still a deadline. Even if they're the nicest person in the world, if you know they are like "oh boy, oh boy oh boy, I get my commission tomorrow!" even if you set the date, it'll work. :D
