The 2021 Challenge: Cakes

It's been a while since the kitchens of Full Moon Cuisine took on a challenge. And what could be better than that classic confection that is a star at celebrations the world over: cake! So, much as was done for cookies and soup before, this year I'll be focusing on making different types of cake all year. Each month I'll bake a new type of cake and share the results. In fact, if you have a favorite kind of cake, let me know below. I'd love to hear some suggestions. Because with this challenge, we're going beyond normal cakes. That way we can all enjoy cake together (through social distance), enjoy cake by ourselves and even enjoy cake by the ocean... wait a minute.

Who gets to...dispose of the cakes? Methinks a wuff is gonna get pretty chonk this year :P
I kinda would love to see your take on like a princess cake, it's a staple cake here in Sweden X3
Might you be thinking we can eat cake and have it, too?
I have a fool proof sponge cake which can be made into a lemon or chocolate cake.
I also have a great light everyday fruit cake and a rich fruitcake which can be made boozy.
a honey cake is lovely and so is a ginger cake.
