How I did dat: Salmon Lunch
Here be the method of da grilled salmon yo!
I start by cutting the skin off a side of salmon which is bought gutted head on and cut straight into large fillets. Then I portion the meat into 6 oz fillets and remove all the flesh left on the skin. The skin is salted for 15 - 30 minutes then baked in the oven when before it is fried.
The fillets are then marinated in a light brushing of olive oil and Dried Greek seasoning: garlic, onion, lemon zest, oregano, etc.. Do not make the salmon wet with marinade else it will burst into flames on the grill and ruin the main component of the dish.
I make the pasta; I used elbow 1 lbs of elbow pasta per gallon of salted water. The pasta is held on a sheet tray after cooked and let cool to room temperature. The pasta is steamed then tossed in olive oil, olives, peas, and cheese before serving.
Next the vinaigrette. It is a mixture of oil, tomatoes, herbs, cappers, shallots/red onions, and vinegar. Make sure it is served warm.
Finally the carrots! Just roasted them the way you like...
Das some good eats.
