Pokemon seems a fairly saturated market on that front.

Well, it does mean there is demand, the only problem is that there's so much supply you're going to have a lot of competition on that front.

Counter to this, however, non-mammals of any sort always do play second fiddle to less "niche" interests. I'm not sure if it evens out or not,unfortunately. I'd lean more towards the Dinosaurs (and other extinct archosaurs and reptiles) as my suggestion, as there are so many visually-interesting ones to pick from and use, but that is entirely my own interest speaking. Wish I had access to some sort of statistics to give you on searches and favourites on Furaffinity.

How about a mixture of both options give people choice when, they look at the adopts, offering variety. This way you also can see, which option works for you again should you decide to do one or the other later.

Mh, if it's about pokemon/Digimons I can understand this premade stuff since their shape it's all identical and you basically can change a color pattern and the likes, but for any other animal, I would say... just go for the custom adopts, it feels lazy in most cases, it feels less lazy and even changing a bit the shape of the body with X color IMO does a lot.
