Posted 15 years agoI am so fucking tired yet happy about doing what I’m doing. I was excited and ready as hell to get into PCC to study Aviation and get my flying career off the ground until a financial disaster blown my plans to dust by a dumb fuck ass family member that needed money. So instead of being in the air this term it looks like I’m grounded until next term.
But it wasn’t a complete let down. The money that wasn’t sucked up by someone’s stupidity I tossed into my girl’s college funding for her massage therapy. And in the end it seem to be a good thing that I didn’t go because My mate have some crazy ass class hours that would have conflicted with mine and she needed help careering her equipment, which she can easily do on her own but can’t at the time because of her bad back. Sooooo instead of being a happy fly boy I’m just a happy ground pounding pack horse for now. YEEEEEEHAAAAA!!!!!

Posted 16 years agoYaba Daba DOooooo! I don’t know why I am saying this but it sounds funny to me and I hope you all got a chuckle form it too. Okay it’s Fatten Your Ass day A.K.A. Thanksgiving day and I hope you all had chance to have fun and stuff your self’s. So far I didn’t do much except clean and help my beautiful mate cook. We stayed home instead of spending it with family because we can’t stand our own folks or each other’s and form this we unexpectedly got a ton of food, yeah we still cook for a large family even though we aren’t living in one. It seems habits die hard with us, heh. But while I was kicking back with a glass of cranberry vodka I just remembered that thanksgiving is about being thankful.

Sweet Corn Bread Pudding

Sweet Corn Bread Pudding
Ingredients
* 1/2 onion, diced fine
* 1 ounce unsalted butter
* 1/2 teaspoon thyme
* 1/2 teaspoon rosemary
* 1 (15-ounce) can creamed style sweet corn
* 1 cup heavy cream
* 2 eggs
* 1 teaspoon baking powder
* 1/2 cup yellow cornmeal, whole grain, stone ground
* 1/2 cup shredded Parmesan
* 1 teaspoon kosher salt
* Ground black pepper
* 2 cups cubed French bread
Directions
Heat oven to 350 degrees F.
Sweat onions with butter and herbs in an oven safe skillet until translucent.
Combine corn, cream, eggs, baking powder, cornmeal, Parmesan, salt, and pepper in a large mixing bowl. Add cubed bread and fold to combine. Pour batter into skillet, right on top of the onion mixture. Bake 50 minutes, or until set. Cool slightly before serving.

Honey Brined Smoked Turkey

Ingredients
* 1 gallon hot water
* 1 pound kosher salt
* 2 quarts vegetable broth
* 1 pound honey
* 1 (7-pound) bag of ice
* 1 (15 to 20-pound) turkey, with giblets removed
* Vegetable oil, for rubbing turkey
Directions
Combine the hot water and the salt in a 54-quart cooler. Stir until the salt dissolves. Stir in the vegetable broth and the honey. Add the ice and stir. Place the turkey in the brine, breast side up, and cover with cooler lid.. Brine overnight, up to 12 hours.
Remove the turkey from the brine and dry thoroughly. Rub the bird thoroughly with the vegetable oil.
Heat the grill to 400 degrees F.
Using a double thickness of heavy-duty aluminum foil, build a smoke bomb. Place a cup of hickory wood chips in the center of the foil and gather up the edges, making a small pouch. Leave the pouch open at the top. Set this directly on the charcoal or on the metal bar over the gas flame. Set the turkey over indirect heat, insert a probe thermometer into the thickest part of the breast meat, and set the alarm for 160 degrees F. Close the lid and cook for 1 hour.
After 1 hour check the bird; if the skin is golden brown, cover with aluminum foil and continue cooking. Also, after 1 hour, replace wood chips with second cup.
Once the bird reaches 160 degrees F, remove from grill, cover with aluminum foil, and allow to rest for 1 hour. Carve and serve.

½ tsp. vanilla (the real stuff not the fake shit)
½ cup butter, melted.
1 cup sugar.
2 eggs beaten.
½ cup bread crumbs, toasted and buttered.
Optional 1 cup caramelized onions.
Directions
1. in a large mixing bowl, beat together all ingredients except for caramelized onions and bread crumbs.
2. lightly grease a 9” by 9” baking dish and pour mixture into dish.
3. cover potatoes with caramelized onions, if using.
4. sprinkle top with toasted bread crumbs.
5. bake uncovered in a preheated, 350 degrees oven for 30-40 minutes or until brown and bubbly.
6. Serve immediately.

Your hit list is:
1 bag New Seasons Market stuffing mix.
2 cups soup stock (veggie or chicken)
2 bags frozen butternut squash cutes (Stahlbush Farms is great)
¼ - ½ LB. (LB is pounds if ya didn’t know) country sage ground sausage.
6 tablespoons butter or olive oil.
2 apples, diced.
1 medium onion, diced.
1 teaspoon garlic powder.
Salt and pepper to taste.
Okay now pre-heat the oven to 375 degrees. Warm your butter in a saucepan over medium heat, adding your onions, mushrooms, sausage, and apples and cooking until the vegetables are soft. Add soup stock and stuffing mix, tossing everything together until well combined.
Transfer the stuffing into a baking pan and cover with tin foil. Bake for 35 minutes covered, then remove the tin foil and bake uncovered for another 10 minutes, or until the top starts to brown.

Maple Glazed Carrots and Parsnips
Posted 16 years agoHey, guys I haven’t been on for awhile do to glutton’s eve preparation AKA thanksgiving.
So while I’m here today I thought I would share some recipe with ya all.
I got this recipe form New Seasons Market our local store that sales good local foods and some imports. This is call Maple Glazed Carrots and Parsnips.
You get 3 lbs carrots, peeled and cut into 1” slices.
1 ½ lbs parsnips, peeled and cut into 1” slices.
½ cup maple syrup.
6 Tbls butter.
½ cup raw pumpkin seeds.
4 cardamom pods.
6 juniper berries.
Salt to taste.
Now that you got your yum yums lets make it into some num nums. Start by preheating the oven to 375 degrees. Melt butter in a small saucepan with the cardamom pods and juniper berries over a low heat. Once butter is melted pour in maple syrup and simmer for about five minutes. So while I’m here today I thought I would share some recipe with ya all.
I got this recipe form New Seasons Market our local store that sales good local foods and some imports. This is call Maple Glazed Carrots and Parsnips.
You get 3 lbs carrots, peeled and cut into 1” slices.
1 ½ lbs parsnips, peeled and cut into 1” slices.
½ cup maple syrup.
6 Tbls butter.
½ cup raw pumpkin seeds.
4 cardamom pods.
6 juniper berries.
Salt to taste.
Now that you got your yum yums lets make it into some num nums. Start by preheating the oven to 375 degrees. Melt butter in a small saucepan with the cardamom pods and juniper berries over a low heat. Once butter is melted pour in maple syrup and simmer for about five minutes. Place sliced carrots and parsnips in a baking pan tossed with salt and pumpkin seeds. Drizzle warm butter and maple mixture over vegetables and toss a bit more.
