Grilled-cheese made more fancy than needed:

-Variety of Pancetta you like, chopped
-Wedge of Pecorino Romana
-Focaccia
-Onion, of some kind.
-Garlic, as you like it.

-Mince the garlic and chop the onion, brown it all in good (like, virgin/green) olive oil
-lightly saute the chopped pancetta with the garlic and onion
-layer a few thin, wide slices of pecorino on two slices of focaccia.
-lightly add garlic/oil/onion/pancetta atop cheese.
-put the sammich in the toaster
-toast CAREFULLY - you don't want to burn, crips, or overmelt
-enjoy with red wine. act elitist. mock the plebes. pretend andy warhol actually had talent.
