Because raw fish doesn't actually taste bad when it's very fresh. And because there are a LOT more types of fish available than red mean and poultry other than where exactly you're eating from on the animal, fish has a much wider range of flavor than normal fare when simply raw. Salmon and tuna are fattier meats and taste a bit sweeter, were something like eel and some kinds of smaller whitefish can have a little bit of a spikier taste. It's not so refined a difference as wine, it's a telling difference, although Nigiri (just a raw fish chunk and a little bit of rice) probably isn't what you'll want to try first. Honestly, with the way the rice is prepared you don't taste the seaweed and instead it gives the piece a bit of a taste (rice is bland, and mostly they mix sushi rice with special vinegar to give even that some taste). With the ingredients all together it ... doesn't taste how you're expecting at all! It's also a sign of really bad sushi if it actually smells like fish, fish when fresh has the smell of water and it's indicative of imporper storage/usage when a place smells bad.
If you're not into raw fish there's plenty of alternative besides, just get some Tempura Shrimp in there, most places offer teryaki chicken or beef, or there's always shredded crab (usually the modified stuff that doesn't taste anything but ehn because it's not real crab). Some places do noodles in there, crunchy tempura chunks, even some with strictly veggies. The point is it doesn't need to taste like fish and mostly doesn't under the definition of it.

I don't know, its just always learning that chicken and fish are very important to have cooked due to problems like disease and worms and such. I am open to new things especially when so many people like it, but I would have no idea what to order if I were try and get some. And I should know about how much variety there is when eating fish since I do live on an island, fluke and porgy being my absolute favorites. *Starts drooling at the thought of Porgy* They are very sweet and make a nice meal for one if you glcatch a medium sized one, the problem being they have a fuck ton if bones and if you cut it wrong the fish is ruined, they are also very fun to catch since they're fighters.
