These cookies are super chocolaty and are studded with dried cherries. Great cookie for someone with a super sweet tooth.
You will need a large heat friendly mixing bowl or a double boiler.
You will need the following ingredients:
-1 cup all-purpose flour
-2 tablespoons unsweetened cocoa powder
-1 teaspoon baking soda
-1/2 teaspoon salt
-8 ounces semisweet or bittersweet chocolate morsels
-1/2 cup (1 stick) unsalted butter, broken into pieces
-1/2 cup granulated sugar
-1/4 cup packed dark-brown sugar
-2 large eggs
-1 1/2 cups dried cherries
To make:
In a bowl mix add in this order
1. add 1 cup of flour
2. 2 tablespoons of cocoa powder
3. 1 teaspoon of baking soda (this is not the same as baking powder)
4. 1/2 teaspoon of salt
Once you have added all dry ingredients listed above, whisk until they are well blended.
Place chocolate morsels and butter in a large heatproof bowl set over a pan of simmering water; stir until melted and smooth.
Once the chocolate and butter are smooth, remove the bowl from heat; whisk in sugars, then eggs, until smooth.
Whisk in dry ingredients just until combined and smooth.
Fold in dried cherries; press plastic wrap directly onto surface of dough, and refrigerate until firm, 30 to 45 minutes.
While the dough sets, preheat oven to 350 degrees F.
Line baking or cookies sheet(s) with parchment paper.
Drop mounds of dough (equal to 2 tablespoons) about 2 inches apart onto prepared sheets. I use an ice cream scoop for this.
Bake in your 350 degree F oven just until edges are firm , 11 to 13 minutes. Cool on baking sheets 1 to 2 minutes; transfer to a wire rack to cool completely. (My slow oven, I baked mine more to 15 minutes, your times may vary.)
Then just grab a large glass of milk (or vanilla soy milk) and enjoy nom nom nom !
