Top O the mornin' to ya lads and lasses! I sure you be fancyin' to be killin' a few brain cells for Mother Ireland tonoight, but before ye be startin' a few pub brawls after a game of drink, might I suggest startin' the day off with a delicious breakfast so green, a leprechaun would be we proud.
Ingredients for ye tidin's of eat:
-3 eggs (for each omelet be all ye needin')
-Chopped Coriander, also known as cilantro
-a can of mushrooms
-a can of chopped or diced green peppers
-a can of chopped or diced jalapenos
-chopped green onions
-mashed avocados
-a block or pack of grated sharp cheddar (but don't be buyin green cheddar cuz chances are you'll be turnin green if ye do)
-a pack of pepperoni slices
-a pack of ham slices
-a bottle of ye favorite green salsa
-butter
-1 small bowl
-1 fork
-1 9 inch frying pan
-1 flat plate, as flat as you can find
-1 spatula
STEP 1:
fry up the pepperonis and ham after choppin' them up into we bits until they're nice and crispy. Set aside with the other ingredients for now.
STEP 2:
crack 3 eggs into the small bowl and whisk with the fork. When fully liquidized, sprinkle some cilantro flakes into the egg mixture. Then take the frying ban and throw in about 1/4 dollop of butter. When melted on Med heat, pour egg mixture into the pan making sure to spread evenly around the pan. Use the spatula to make sure the eggs don't stick to the pan, scoot it around a bit to keep it from stickin'.
STEP 3:
And this is the hardest part, your gonna haveta flip it. When the egg has cooked long enough on the bottom to be almost as solid as a pancake, place the flat plate on top of the frying pan and flip the omelet over onto the plate, then slide the uncooked side back into the frying pan. (This is the easiest way I've found to flip it, if you have an easier way, go with that.) Cook for about 2 minutes longer.
STEP 4:
Add all other ingredients, except the salsa, to one side of the omelet, then fold the other side over like so in the picture. Press down with the spatula to hold in place. Scoop out of the pan and onto a nice plate.
STEP 5:
Garnish the top with a sprinkle of extra cheese, then top with the green salsa and a dollop of avocado. Enjoy ya we boocks and happy Saint Patty's Day!
