
Warcraft inspired: Undermine Clam Chowder
(If you like seafood, and you like playing World of Warcraft, then there is nothing better for someone who plays a Goblin than a great big bowl of Undermine Clam Chowder. Clam Chowder is so easy to make at home with enough patience. Try this zesty, spicy Warcraft inspired spin on an already great soup.)
**Easy Difficulty**
Serves 8 to 10
8 oz Frozen baby Clams, thawed
8 oz Bacon, chopped
10 cups whole Milk
1 cup Heavy Cream
4 cups Potatoes, small diced
3 cups Onions, small diced
1 ½ cups Carrots, small diced
1 ½ cups Celery, small diced
2 Tbsp fresh Garlic, minced
1 fresh Bay Leaf
1 Tbsp fresh Dill. minced
1 Tbsp fresh Thyme, minced
1 Tbsp fresh Chives, minced
1 Tbsp Tabasco Sauce (Add more if you like)
Salt to taste
White Pepper to taste
(optional) A dollop of Sour Cream per person.
(optional) Red Chilli Flakes
1.) In a large pot set at medium high heat, brown the bacon until crispy, and until much of the fat renders off the meat. Remove crispy bacon bits and set aside on a paper towel.
2.) Add Garlic, Onions, Carrots, Celery, and Bay Leaf to the Bacon oil in the pot, and cook until onions are translucent, and the vegetables are al dente. Then add potatoes and cook to soften. Approx. 8 minutes.
3.) Add in Milk and Clams and bring to a boil. Then reduce heat to low and let simmer for 25 to 30 minutes, or until potatoes are nice and soft.
4.) Bring heat back up to medium high, and add in Heavy Cream, Dill, Thyme, Chives, and Tabasco Sauce. Stir and cook for another 5 minutes. Add Salt and White Pepper to taste.
5.) When done, serve in a bowl with a dollop of Sour Cream, a sprinkle of Chilli Flakes, and Bacon Bits on top. Serve with a fresh Spinach Salad. Enjoy!

If you don’t play WoW, you might not be aware of how much food and cooking plays a part in the WoW. Food constantly drops from monsters, there is an area dedicated to cooking daily quests, and a lot of the Warcraft Universe revolves around food, and for good reason! Food makes up a big part of any person’s lives.
Tabasco Sauce is not only spicy, but has a good tangy flavor which is great for this recipe. Some recipes use red wine vinegar, but Tabasco Sauce is more common in house holds, I’d think. You can make this version of clam chowder even more spicy with a minced jalapeno pepper. Just add it with the onions.
And, lets be honest. BACON. It’s one of those little guilty pleasure a lot of us meat lovers have. Hey. Some of us don’t even feel guilty for eating Bacon. Using Bacon fat instead of canola oil or butter is common in a lot of ethnic cuisines. Pork Belly to be exact. It really adds a nice smokiness to the chowder. Bacon and Seafood make such a nice pair. That’s why bacon wrapped shrimp, and bacon wrapped scallops are so popular. You can skip the Bacon all together if you don’t eat pork. You can easily use raw chicken skins, or even Duck fat. Render the fat the same as you would with Bacon.
As for the colorful ingredients. Yeah. This isn’t the usual pale Clam Chowders you get form a can. Haha. My Clam Chowder is more herbal. Fresh, and 100% more colorful than the pale stuff from a can. I have nothing against canned food, of course. I just like me some home made goodness. For the Horde and Happy Eating!
