I have not gone to the point of retopologizing, reprojecting, and sculpting more afterward, though I really should try that some time! I use the Dynamesh function with 0 blur and around 120-240 resolution for the most part. I've tried to keep away from subdividing now that I've got 3-D printing in mind, and wishing to keep the models below 1 million polygons.

That's exciting to hear that you got a model printed out! Do you have any photos or images of the work? I'd love to see it. : D
As for reducing poly count, I personally use the QRemesher tool - I first go and use the Remesher brush to draw out a few particular curvatures I wish to retain in the model, set my given resolution, and kind of go by trial and error until I find the best compromise of resolution and detail.
