
So.. I had six house guests over today from the Vancouver Weavers & [yarn] Spinners Guild's offshoot, the Vancouver Basket Weavers.. cue bad jokes now.
And my thing to do is bake something for people coming over and for potlucks.. so I made 2 massive batches of dough.. Both of these are egg breads, both are made with coconut milk.
What you see in the photo is all I have left. There was twice that amount of light coloured bread, and twice that amount of brown bread. I got RAVES about my bread, one woman even phoned back a couple hours later to thank me for making it.
I got up at 6 am and had bread baking and done by 11 am.
The light coloured loaf contains:
2 lbs of steamed yams, locally-produced blueberry flower honey, ground coriander seeds, ground fennel seeds that I grew in my garden, turmeric, cloves, and cumin.
The dark coloured spirals contain:
2 cups finely chopped pecans, 1/2 cup cocoa powder, 2 tbsp white sugar.
Yam bread is light, airy, soft, savoury and slightly sweet. It got the most raves. Cocoa bread is a heavy, dense bread, tastes like dark chocolate truffles and is great with coffee.
I used up the coconut milk in the bread doughs, so the yam bread got a water and egg yolk wash, while the cocoa bread got a chocolate almond milk and egg yolk wash.
