The Reason why she would eat Jade is cause of what she is. Even though her appearance might not show it, she is a ravenous predator. She had always a huge appetite and wanted always more, her parents eventually didn't managed to feed her enough anymore and after she reached a teenage state she began to eat her own sisters and family, parents and not so long after her neighbors. Her Metabolism allowed her to digest the food in a much shorter time than anything would usually be capable of.

A Wandering mage came into the Village to aid the call of the Villagers that were afraid of their own live, by the disappearing Villagers and spread rumors that a monster walked among them that stole the children at night and even the adults when they were foolish enough to be outside.

This very mage attempted to destroy the girl with a curse, but something went horribly wrong as she was transported in the future with a complete lack of her memory. Only her crystalline ear is left as a sign of what the curse was supposed to do. Shattering her very being and freeing any soul she consumed together with the bodies. Instead they are captured in the crystalline Prison.

While her hunger is contained and she is now pretty much like any other being, her deep lust for rabbits is still hidden inside and sometimes kicks back in. Going into a ravenous eating habit for other rabbits if any around. She would have eaten jade, cause she stood may to long around her. Having her scent filling up the nostrils making her predatory instinct kick back in and her uncontrollable lust for other rabbits to eat.
