Also known as 'guazzo', gouache would be a paint type, intermediate between acrylics and watercolor. It's applied in a more covering manner (like acrylic) but it can sustain a great level of dilution and barely contains a binder (like watercolor). Due to the more direct and concentrated application of pigment, it sustains a really high color saturation, a property exploited by many cartoonists and illustrators
