
really sweet, spectacular if you have guests. it is almost like a souffle or dutch baby. It inflates a bit when it is done, didn't have any vanilla ice cream to go with it...would have been amazing.
you will need:
for the batter:
a 10 inch cast iron skillet..or any other ovenproof skillet.
1/2 cup of all purpose flour.
1/2 teaspoon of baking powder
1 tablespoon granulated sugar
1/8 tsp salt
1/8 tsp nutmeg
4 eggs
1 cup of milk
2tbsp of butter melted
1tsp vanilla extract
for the apples
shortning
1/2 cup sugar divided
1/2 tsp cinnamon
1/2 tsp nutmeg
1 cup of thinly sliced granny smith apples
powdered sugar
batter:
Start by combining dry ingredients for the batter
whisk together eggs and milk add egg mixture to flour stirring with a whisk.
let stand 30 mins
preheat oven to 425 degrees
apples:
grease bottom and sides of your skillet with a thin coating of shorting
combine 1/4 a cup of the the sugar with the other dry ingredients and sprinkle evenly on the bottom of the pan. arrange apples in a spoke-like pattern starting from the center. cook over medium heat for 8 minutes (or until mixture boils) sprinkle with remaining 1/4 cup sugar
slowly pour batter over applees and bake at 425 for 15 minutes reduce heat to 375 (do not remove the pan from the oven or open the door. Bake an additional 13 minutes (until set and slightly inflated) carefully loosen edges with a spatula and place on a serving platter. serve with a dusting of powdered sugar.
good for breakfast or dinner, this is the original recipe i used. it was a bit too sweet you might be able to omit the second 1/4 cup of sugar on the apples.
i highly recommend serving this with vanilla ice cream
