Both the D800 and D600 will perform at nearly the same level. Obviously, the 36MP of the D800 will allow you to capture more detail than the 24MP D600. But the key phrase there is 'will allow'; you won't see all of the benefits of 36MP without good technique and lenses.
If you want to get into FX while saving some money, then the D600 is the camera you want. You'll get a smaller body, a 39-point AF system (inherited from the D7000), and less controls (no dedicated AF-ON button, one less programmable function button, etc.). But it's every bit as capable as the D800, especially if you don't need 36MP.
