Yeah, hooved animals were always problematic for me, too. Even if you anthropomorph their hands to include fingers - including thumbs - what do you do with their feet? I've seen artwork that have hooved animals with human-like hands and retaining their hooved feet, but it doesn't really look that right to me. Keep hands and feet as hooves and you run into the problem of dexterity.
I guess if MLP can hold and manipulate items without any digits at all, and the entire universe of Pixar's "Cars" can exist in much the same way, I guess you can have characters that retain their hooves and still do everything non-hooved anthros do.
