Creative, colourful and a flavour to savour from the kitchens of
slugbones
Okay, this one has nothing to do with my diet and is a complete indulgence that I decided to make for my housewarming get-together. This served a group of 6 and there were leftovers. :B
INGREDIANTS
1 lb (or more, depending on how much you want with the rest of the dish) linguine or fettucini, cooked to your liking
Steak:
1 -2 lbs. top sirloin
Italian dressing, whatever's your favorite
1 tablespoon rosemary
Alfredo & Toppings:
4 cups chopped baby spinach
1 jar alfredo sauce, again whatever brand you dig (or make your own!)
1/2 cup chopped green onion
3 tablespoons crumbled gorgonzola cheese
2 tablespoons chopped sun-dried tomatoes
Balsamic Glaze:
2 cups balsamic vinegar
1/2 cup brown sugar
PREPARATION:
Marinate Steak:
Cut into bite-sized hunks, trimming fat if needed, put into a ziploc bag
Mix Italian dressing (however much you need to coat) and rosemary
Marinate in fridge for an hour or two
Alfredo:
Dump the whole jar of alfredo into a large skillet
Add most of the green onions (save a bit for sprinkling on top of the dish)
Add spinach and gorgonzola, cook over medium-low and stir until gorgonzola has melted and spread throughout sauce
Preparing Steak:
Prepare as you would sirloin; I baked it in the oven, though I forgot the heat I had it at, sadly. Google should be able to help you with that one. You can also pan-fry it or grill it (had I a grill I would have - that would have made this doubly stellar).
Balsamic Glaze:
Dump vinegar and brown sugar into a small saucepan
Bring to a boil
Reduce heat, let simmer 20 minutes or until it's reduced to about half and can coat the back of a spoon
Putting Everything Together:
Dump your pasta on whatever you're serving ths beast on. It should be large.
Slather it with your alfredo
Top with cooked steak strips (make it pretty!)
Sprinkle remaining green onions on top, as well as chopped sun-dried tomatoes
Delicately drizzle the entire thing with your balsamic glaze
You can also add a bit more crumbled gorgonzola or sprinkle a bit of parmesan over the whole thing if you'd like.
I served this with crusty asiago bread and it was pretty great.
