We are using a small pan so that it helps keep that uniform shape for all the portions of Egg Foo Young we are cooking. We are also using a High Heat so the Egg Foo Young gets a bold browning when cooked. The texture will also be crispier, but keep your eye on the eggs. When they are firm enough on one side, flip them over. Each side should look this this.
