Plate I made in garde manger class last semester. Meats are: duck breast, beef tenderloin, and pork loin. Stuff in the middle is called pork rillete. Pickles and pickled onions on the side, with some asparagus spears. In the bowl, is a sweet potato salad with rosemary and pecans, a recipe that I came up with on the spot and should have wrote down.
