Ramen Noodles Elevated: Ver 5. Laap Lettuce Wraps Style

(Savory and tangy. Sweet and spicy. Zesty, yet refreshing. Crisp, and delicious Laos Laap Lettuce Wraps you can prepare for your friends and family to show them Ramen is amazing and versatile.)
**Easy Difficulty**
Serves 2 to 4 as a meal or can be used as an Appetizer for a party
1 square package of Instant Ramen Noodles (Save seasoning packet for another recipe)
1 lbs / 450 grams Lean Ground Beef (93% lean, 7% fat)
½ Tbsp / 8 g Garlic, minced
½ Tbsp / 8 g Ginger, minced
¼ Tbsp / 4 g Lemongrass, minced
1 ½ Tbsp / 23 g Shallots, minced
1 Kaffir Lime Leaf ( ½ Tbsp / 8 g), minced
2 Tbsp / 30 g Chives, minced
4 Tbsp / 60 g Cilantro, thin chopped
1 tsp / 5 g dried Red Chili flakes
5 Tbsp / 15 ml Fish Sauce
2 ½ Tbsp / 35 g Sugar
1 Tbsp / 15 g Toasted Glutinous Rice Powder (See my Tutorial Link below)
1 Tbsp / 15 ml Toasted Sesame Oil
½ cup / 120 g roasted Peanuts
¼ cup / 60 g White Onion, finely sliced
½ cup / 120 ml Fresh Lemon Juice
½ cup / 120 ml Fresh Lime Juice
1 Romaine Lettuce Heart, cleaned and separated (You may need 1 more Lettuce Heart)
1.) bring a small pot of water set at high heat to a rolling boil. Turn off heat and add in Instant Ramen and cover. Let sit for 3 min, then drain. Run the ramen under cold water to prevent carry-over cooking, then drizzle a little vegetable oil onto the noodles so they don’t stick. Set aside.
2.) In a wok, or a large deep pan, start by heating the toasted Sesame Oil on medium high heat. Then add in Shallots, Garlic, Ginger, Kaffir Lime Leaf, and Lemongrass. Brown the mixture lightly and then add in the Ground Lean Beef. Cook the beef until it is no longer pink. Then remove from heat, and cool the Beef with a paper fan. We let the mixture cool because we don’t want to wilt the herbs in the next step. We also don’t want the lemon and lime juice to become bitter.
3.) When the Ground Lean Beef is cool enough to touch, but still warm, add in the Chives, Cilantro, Toasted Glutinous Rice Powder, and Red Chili Flakes. Stir and then add in the Lemon Juice, Lime Juice, Fish Sauce, and Sugar. Mix well. This mixture is called “Laap” in Laos.
4.) While the flavors of the Laap marry, set up your Lettuce Wrap plate by placing a small bowl of Toasted Peanuts, a small bowl of finely sliced White Onions, some sprigs of fresh Cilantro, a few wedges of Lime, a few Bird’s Eye Chili Peppers, and the cleaned and separated Romaine Hearts, all elegantly on the plate for your guests.
5.) Place the Laap into one serving bowl, and the Ramen into another serving bowl. Allow each guest to prepare their own yummy Ramen Lettuce Wrap they can eat with their hands, and Enjoy!
Extra Info: Although the Ramen in this Recipe isn’t the star of the show, per se, the Ramen really does add a lot of texture and flavor to the dish. Plus it adds some carbs to help keep you full. Laos Cuisine doesn't normally use Ramen Noodles, but this dish will taste great either way. It's just my spin on things. I like to drizzle toasted Sesame Oil over my Ramen once they are cooled. Since I use the same type of oil to make the Laap, it bridges the flavors rather nicely when eaten together with the peanuts on the Lettuce Wrap. Obviously if you are allergic to seeds and nuts, don’t use these ingredients.
Laap is such a tasty, and healthy if I might add, meal to make. It’s so complex in its flavors but it’s really easy to make since it’s all done in one large pan. There are a few uncommon ingredients in this recipe, like the toasted raw Glutinous Rice Powder, Kaffir Lime Leaf, and the Fish Sauce, but all three ingredients make this dish pop. You can easily use regular Salt instead of Fish Sauce, and you can omit the Kaffir Lime Leaf, and the Rice powder completely. However, if you are able to do the Rice powder, I highly suggest you use it. It’s so simple to make at home, and it’ll make your Laap taste so much more authentic. It has unique nutty, aromatic, starchy flavor you can’t mimic easily.
