
Japanese Eggplant Wrapped Meatloaf
(Sometimes it’s hard to dress up meatloaf into something fancy. Sometimes family members get tired of the same meatloaf recipe every week, or month, or whenever. Well, here’s an Asian twist to a classic American meal!)
**Easy Difficulty**
Serves 4 to 8
1 lbs / 0.5 kg Ground Pork
1 lbs / 0.5 kg Lean Ground Beef
1 Large Egg, beaten
2 Scallions, whites and greens minced
2 Medium Sized Japanese Eggplant, thinly sliced into long strips
2 cups / 260 g Panko Bread Crumbs
4 Tbsp / 60 ml Hoisen Sauce (Separate 1 Tbsp / 15 ml of Hoisen and set aside)
4 Tbsp / 60 ml Ketchup
3 Tbsp / 45 ml Light Soy Sauce
1 ½ Tbsp / 22 ml Shaoxing Rice Wine
2 Tbsp / 30 g Garlic, minced
2 Tbsp / 30 g Ginger, minced
1 tsp / 5 g Chilli Flakes
1 tsp / 5 g Chinese Five Spice
2 tsp / 10 g Dried Basil
Salt and White Pepper to taste
(optional) 1 packet of Ramen Seasoning Powder you saved from a previous recipe
(optional) Sriracha to taste
(optional) Minced parsley for garnish
1.) Prepare the sliced Japanese Eggplant first by blanching each of the strips in boil water for about 25 to 30 seconds. Place the Eggplant on a plate lined with paper towels and pat dry. The Eggplant will begin to oxidize, but that’s ok if they turn brown. They will be covered in Hoisen and Soy Sauce. Set aside.
2.) In a large bowl, mix together the Ground Pork, Ground Beef, Egg, Scallions, Panko, 1 Tbsp / 15 ml Hoisen, Ketchup, Garlic, Ginger, Chilli Flakes, Chinese Five Spice, Dried Basil, and a pinch of Salt and Ground White Pepper. You may also add the optional ingredient of the Ramen Seasoning Powder packet if you like, but be sure to watch the salt content.
3.) Once Meatloaf is mixed, lightly oil a loaf pan and use it as a mold to make two loaves. Place the two loaves on an oven pan lined with foil. Let loaves rest in the fridge for 10 to 15 min while you make your Japanese Eggplant Wrappings.
4.) In a medium sized bowl, mix together the remaining 3 Tbsp / 45 ml Hoisen, Shaoxing Rice Wine, and Light Soy Sauce. If you like your food spicy, feel free to add the optional ingredient of Sriracha to your desire level of heat. Add the slices of Japanese Eggplant into the mixture so they are evenly coated.
5.) Take the Meatloaves out of fridge and wrap each loaf in the Hoisen coated Japanese Eggplant (you might have extra slices. Feel free to sauté them later! They‘re yummy!) . Then place the Japanese Eggplant wrapped Meatloaves into a preheated oven set at 350 degrees F. / 175 degrees C. for one hour.
6.) Once done, and the internal temp of the Meatloaves are at 160 degrees F. / 72 degrees C. remove Meatloaves from Oven and let rest for 10 min then slice, and serve! Enjoy!
Extra Info: As a child, Meatloaf had been a weekly meal my mother made for her family. Most often on Thursday for some reason. My mother worked fulltime, and didn’t get home until around 6 at night, so she’d often made easy, quick meals. While fast and efficient, her recipe got tiresome over the years. If you’re like me, and are tired of the same old Meatloaf every week, try mixing it up a bit by using your favorite meatball recipe. This Recipe for example, is a Chinese Meatball Recipe. It is also a great Bao meat filling recipe. In loaf form, it tastes just as awesome even if the presentation is more American. I used Japanese Eggplant to keep the meat moist, and to give it some vibrant violet color. Eggplant absorbs so much flavor from the ingredients around it, that it makes a great wrap.
As for the optional ingredient of Ramen Seasoning, this is just a way to use those extra packets you’ve been saving if you’ve been trying my recipes from my Ramen Noodles Elevated series. It gives a subtle boost of flavor, but watch out for the salt content. Use less salt to taste if you do decide to use Ramen seasoning Powder. As for the Sriracha, I just like some kick in my food. If you don’t like spicy, then you don’t have to add it in at all.
