Well, rainbow says this about the age:
"desert children are named as they are because of the rate in which their bodies age. they live at least three times as long as a normal human, putting their lifespan at/about 280 years, and having it so that their features take much longer to change and grow. "
So "children" seems relative to their species. Their "child" would be similar to our adult, if I understand it correctly. But I'm pretty sure you can change whatever you like about their age once bought.
