I'm curious about how you do your colors. Do you just...pick and go, or do you ever just..adjust them after?

Bit of both! I pick as I go to start, then adjust later.
Like oh okay so this character has these colors, what are good colors to go with it and how can I pull the image together with lighting and random splashes of hues?
Then in the end I photoshop and play with the adjustment options a lot.
