Thought that at first, though Fighter and Barbarian can be adapted to it well using the right unarmed feats. Fighter especially due to it's versatility in building with being able to take so many traits and such. Though I think really you'd only want to go that route with a human as well to get the bonus feats to begin with.
Monk is probably easiest though due to it's already starting out down the unarmed route. Also I'mma babbling I'll stop now. XD
