I have to second, (or third, or fourth) the comment about the colored eyes in an otherwise monochromatic image. (Art school talk there.) It really gives the image a certain depth and emphasis the characters.
Another technique I enjoy is an artist uses a colored paper (or background ) that is the same color as the principle subject. Such as using a grey back ground for a husky or gray Siamese. After doing the coloring, they go back and use a white pencil or brush to add the highlights. They don't teach this anymore in art school, but was very commonly used by the old masters.
