Mordi's 'Monster Salmon Salad'
Ingredients:
1lb fresh salmon OR 4 5.5oz canned boneless skinless salmon
2 tomatoes, diced
1 tbsp paleo mayo
1 tsp dill
Directions:
If using canned salmon, open cans and drain. If using fresh salmon, wrap in foil and bake for 30min at 350F or until fully cooked. Allow salmon to cool, and break up into small flakes. Place salmon into a large bowl and add all other ingredients. Stir to combine.
Makes about 4 servings. About $5 for everything using fresh, and about $4 using canned.
