Mordi's 'Monster Meatloaf'
Ingredients:
5lbs ground beef
4 eggs
1 cup uncooked quinoa
2 cups beef broth (either your own bone broth or made from bouillon)
1/4 c onion powder
1/8c garlic powder
1/3 c dry vegetable soup mix (mine had onion, spinach, and carrot I believe)
5-7 sweet potatoes
1 tbsp seasoning for sweet potatoes (I used McCormick's Onion Steakhouse burger seasoning, but whatever you like works too)
1/4 c paleo-friendly ketchup (I like Heinz's 'Simply Heinz') (optional)
1/4 c honey (optional)
Directions:
Cook your 1 cup quinoa in your 2 cups beef broth. It cooks just like rice, so either stovetop or in a rice cooker works fine. Cut your sweet potatoes into half-inch thick half medallions and toss them in the bottom of your roasting pan. These will act as a trivet for your meatloaf! Season your sweet potatoes, then preheat your oven to 275F.
Once your quinoa is done, combine all of it with the meat, eggs, onion powder, garlic powder, and vegetable soup mix. Mix by hand until even. Form this into a loaf that is no more than 2" thick and lay it on top of your seasoned sweet potatoes. If you would like a glaze, you can mix 1/4 c ketchup and 1/4 c honey and glaze the top of the loaf. Cover and bake at 275F for 3 hours.
Serves 8 hungry monsters!
Variations:
Leave out the quinoa for a 'true' paleo dish. It's still good without it! Consider still adding the bouillon mix into the loaf when adding your other seasonings.
Change up the seasonings!
