Stunningly succulent and colourful these zucchini treats are sure make a fine meal, entrée or side-dish: from the kitchens of

Ingredients:
1 large Zucchini
1 lb. mild Italian sausage
1 can (14.5 oz.) diced tomatoes (drained)
Italian seasoning to taste
1/2 C grated Parmesan cheese
Directions:
Heat oven to 425°F
Cut Zucchini into ½ to ¾ inch slices
Remove seeds from each slice
Replace seeds with Italian sausage
Cook in skillet over medium to medium-high heat until sausage is browned on each side. (be careful when turning over, the sausage likes to slip out of the zucchini)
Place patties/slices on greased cookie sheet.
Mix Italian seasoning with diced tomatoes and spoon on top of each zucchini/sausage slice.
Sprinkle grated Parmesan on top of each slice.
Bake at 425°F for a half hour.
Makes amount shown (~8 slices)
