Ive been perfecting this recipe for a while now, and its finally gotten good enough to share! :D
Ingredients
for 1 dozen cookies
- 1/2 cup butter, or margarine for the vegan alternative. Soft and at room temperature
- 1/4 cup white sugar
- 1/4 cup brown sugar
- 1/4 cup Agave nectar (substitutes for Agave nectar are maple syrup, brown rice syrup, or sorghum syrup)
- 1 egg, Or an 'egg' made with your prefered egg re-placer
- 2 teaspoons vanilla extract
- 1 1/4 All Purpose flour
- 1/2 teaspoon baking soda
- pinch of salt
- About 1 cup of chocolate chips, though you can add more or less. I used vegan chocolate chips, though I'm sure you can use bittersweet/dark chocolate ones and it should be fine
Directions
- Preheat oven to 350 degrees F, Grease cookie sheet.
- In a large bowl, cream together Butter, Sugars, Agave nectar and Vanilla until creamy and soft. Mix in the Egg, Salt, Baking soda and Flour until well blended. Then add the Chocolate Chips so they are evenly dispersed.
- Grab medium-small handfuls of the dough, and roll into balls, and press lightly onto cookie sheet, so they are small circles (this dough doesn't spread out very much)
- Bake for 10-15 minutes at 350. (our oven is broken so mine got a bit burnt, but they should be soft baked, and lighter than in the photo)
