The gray stallion is supposed to be Shadowfax from the Lord of the Rings (the lord of all horses). Well... Cotton Candy is the pink mare. She's not a "horse" she's actually what's known as an Alicorn. Alicorns are Unicorns crossed with a Pegasus.
Shadowfax knows Cotton Candy isn't a horse, and he cannot be her Lord, but even if Cotton Candy is not a horse, she still bows to him out of respect and friendliness. As Shadowfax does the same to her to show her respect back. :)
