I'd just look at the pages with info on fursuit building, it's partly the same! (fursuit.livejournal.com, for example) I don't know anything about making plushies specifically, but in this case to make the body I simply made the shape out of newspapers and other junk and then made a tape pattern around it like I would with a fursuit head.
The nose is some kind of soft styrofoam on the inside that I carved until it was smooth, then it's covered in a very thin layer of two-component epoxy clay. (In case you don't know what that is, it's plastic that turns hard after you mix it, you have about 1-2 hours to mold it and then it needs to cure for 24 hours. It was quite the pain in the ass to get it on right)
