yeah, I though you might be referring to a heavily ribbed fish. When I clean I separate the mussel around the head, slit the gut, and then work slicing down the back along the spine leaving the filet attached at the tail base till the back is loose, then separate the filets from the body and remove the skin by sliding the knife under it and shaving it off. then got to snap the spine so it fits in to garbage. Never used a gut-hook on a fish before, might have to try that now.
