Quick 'N Easy Tofu Scramble
Prep + cooking time: 20 mins
Ingredients
(this recipe makes one serving)
1/2 block extra firm silken tofu (I use Morinaga brand)
1/2 medium sized yellow onion
2 tbsp olive or unflavored coconut oil
1 tbsp garlic powder
3/4 tsp turmeric
1 tbsp Bragg's soy seasoning
salt and pepper, to taste
Procedure
1. dice onion to desired size and spread into a medium sized skillet
2. drizzle olive oil over the onion and set heat to medium. stir to evenly coat the onions.
3. open your block of tofu. drain the box, then press tofu between paper towels to remove excess water.
4. go stir your onions.
5. come back to your tofu. cut into 1/2" cubes.
6. when onions are milky (or browned, depending on preference), add tofu cubes. break tofu cubes into smaller pieces with your spatula as you stir.
7. sprinkle garlic powder, turmeric and Bragg's soy seasoning over the mixture. stir until tofu is uniformly colored.
8. continue cooking until desired level of doneness is achieved. I like mine just barely browned, which takes about 7 minutes from the time I add the tofu.
9. add salt and pepper. give it one final stir to coat.
10. serve on a warmed plate on it's own, with GF toast with vegenaise, or wrapped up in a GF tortilla. also makes a great side for homefries!
