Sooo, I went to home depot today and found some plants that I really liked. Small succulent plants, some close relatives to cacti. (The miniature aloe plant <3 ) I had to buy them, because you don't often find these particular types around here. Made this when I got home. I really like how it came out.
(NOTE: update on jar gardens. Unfortunately my house is so dry that the moss in the other gardens died off after a good run, but the little desert plants that I had in a few of them survived and even thrived. I do have a smaller succulent garden that I've had growing for a few months now, it is doing quite well.)

Nah, i tried that with the jars, but it didn't work well. My house is super dry.
These are desert plants, so they love dry air. You can actually over water these, and damage them. They like it pretty dry, though when I bought them today, they were a bit TO dry. I had to water them after I got them all transplanted from their pots.

I've found that succulents really like my lamp for some reason. Its just a normal bulb, but they do well growing beside it. -shrug- It won't get hot, but it will provide them with plenty of bright light. That, and they get mild indirect sunlight through the window every day.
Should be some succulent plants at a nursery near you somewhere. They're not overly expensive depending on which ones ya buy. They like sandy or gravely soil, or just plain sand normally works if you're going to be fertilizing them every couple of waterings. They're pretty hardy plants, though the leaves do break easily, so be careful in transplanting them to the container of your choice.
My question is this: how the heck did you get them into the jar, and how will you get them out when they start to grow?
Also, is this also possible to pull off with fungus, moss and darkness-loving undergrowth, or is it something that works better with cacti, succulents and the like?

I'm not sure if you could pull off fungus and moss like this.. I'd say it really depends on how much moisture you've got in your house normally. Mine didn't last long because I've got really dry air in my house.
I can actually fit my hand into the top of the vase. It isn't that small. The vase itself is almost a foot tall. If they outgrow it I can easily get them out if I need to. :)
