In my opinion, it's a matter of exposure, really, and personality as well. Take me for example. I'm an easy-going, laid-back, mostly-open-minded guy who grew up in the 90's. And the 90's had a seeming gratuitous amount of cartoons with fat animals, like Animaniacs, Alvin & the Chipmunks, Bartok the Magnificent, etc.
But even still, I have no idea why fat creatures are so appealing to me.

Think Mungkorn explained it pretty well. I'm sure others may have a different outlook just like with any sort of theme to furry art. I can't really speak for everyone, as I'm sure answers vary between person to person.
As for my personal preference I just think chubby critters are super cute. I have a few overly pudgy characters for the sole reason that I'm no stick figure in person. I make pudgy characters, because I'm proud of who I am in real life. Again, everyone's reasons varies from one another.
Regardless I find it really adorable, and a pleasure to draw. Looking forward to doing more overly large furs for commissions in the future ^^
