I always ink with the pen tool stabilizer set to 15. You want to make fast strokes along your lines, and if you hold control while the pen tool is selected you can shift anchor points to reduce jaggedness.
Faster strokes are better than slower ones! Not too fast or you won't have enough control over the line weights, but it's better to be faster than trying to meticulously follow your lines. The more anchor points created when you swipe with the pen, the worse. Don't be afraid to make multiple strokes though!
