So here's some egg noodles I made. They keep popping up in my pics so I thought I'd make a special submission for you guys. They're real basic and simple.
Egg (2-3)
flour- all purpose
olive oil
So break your eggs into a bowl. Start with one cup of flour and add that. With some kinda spoon (actually doesnt matter what you use but don't use a whisk) break the yokes and start mixxing. Then add a small amount of oil about 1/8 a cup at most. keep mixxing it will start to clump together. It will look really slushy so add another cup of flour and keep mixing. Keep adding flour and mixxing till it becomes a ball. At that point you can kneed it a little to make sure everything is thoroughly mixed. I usually found that it equals about 3/4ths a cup to a cup of flour per egg depending on how moist you want the dough.
It should make a ball about the size of your fist. Sprinkle some flour on the counter top or table where you want to roll it out and sprinkle flour over the ball. Place it on the floured surface and start rolling it out with a rolling pin. Sometime pull it up and flip it putting fresh flour down on the counter top and more on top of the dough. I like to make mine really then so i roll it out to I can see the counter or table under it. Let it dry for a while. maybe like an hour or so. Then roll it up and slice it into the thickness of the noodles you want. Example: fettuccine or "shoe string" like these.
Let them finish drying and then when you boil them boil just like spaghetti. I don't ad salt to the noodles when i make them and thats because I'm going to salt the hell out of the water. Seriously just dumb a bunch in there. bring the water to a boil and reduce heat to a simmer and drop your noodles in it for about 10 - 15 minutes. you can try a noodle if you want to see when they're done.
Other than that you can add your own things to the dough if you want. sometimes I'll put herbs in mine. Its really simple to make these. I used three eggs in this batch and cut them thin. It made enough to feed five and still have some left over.
