
Cinnamon Monkeybread
(The Holidays are over, but it looks like a lot of us are stuck in cold weather. Darn Polar Vortex… Here is a super simple, hot and yummy Monkeybread recipe you can make with the kids. Plus the little ones will have loads of fun pulling this cake apart with their fingers and nom nom noming down. :3)
**VERY Easy**
Serves a lot
(You will need a Bundt Pan)
2 (16 oz each) Cans of Buttermilk Biscuits (I used Pillsbury)
1 cup / 170 g Brown Sugar
1 cup / 170 ml Butter, melted
½ cup / 90 g White Sugar
2 tsp / 10 g Cinnamon
1 tsp / 5 ml Vanilla Extract
½ tsp / 2.5 g Nutmeg
1.) Grease the Bundt Pan and set aside. Separate all the raw biscuits, and cut them into fours. Set aside.
2.) In a large bowl, or large plastic bag, mix together the White Sugar, Cinnamon, and Nutmeg. Toss and/or shake the Biscuit wedges in the Sugary-Cinnamon mixture until all pieces are well coated. Then layer the dough into the Bundt Pan.
3.) In a separate bowl, mix the melted Butter, Brown Sugar, and Vanilla Extract until well incorporated. Pour mixture onto the dough in the Bundt Pan. Use a fork or a spatula to press everything flat so it sits neatly on your cake display or plate when cooked.
4.) Bake in a preheated oven set at 350 degrees F. / 175 degree C. for 30 to 35 min. or until golden and cooked all the way through (Not doughy in the center). Cool Bundt Pan completely for 20 min. then turn the Bundt pan upside down onto a cake display or serving plate. Be careful of sticky caramel! Now, get your fingers ready, and Have fun pulling apart your Monkeybread!
Extra Info: My little niece came over and wanted to bake something together. However, she was very adamant on getting involved with every step. So I couldn’t make anything with chocolate and a double boiler. That would have been too dangerous for someone so young. And I couldn’t let her use my mixer. That’s a disaster waiting to happen. So, I decided my little niece and I should make Monkeybread. It’s simple. It’s easy, and what’s even better, it’s something fun she can help out with every step. So, we went to the store and bought some cans of Buttermilk Biscuits.
Yes. Even Chefs use pre-made products at home. Why not? It saves time and effort when you are in a rush. :3 Sure you could make your own biscuit dough / Bundt Cake Dough, but when little kids are involved, it’s nice and fun to let them help out. A few plastic knives, a couple cans of Buttermilk Biscuit Dough, some plates and plenty of napkins, and you have yourself a little party with your kids.
It can be messy, and sticky, but everything is pretty safe. I personally used this time to help my niece with her math skills. Together we measured out of Cups and our teaspoons. She even learned how many teaspoons where in a Tablespoon, and how many Tablespoons were in a cup, and how many cups in a gallon! When we got into the subject of ounces, and grams, then she got lost, but that’s ok. We’ll catch on next time.
As for the Recipe itself, this particular Bundt Cake Cinnamon Monkeybread is a good base to make several different kinds of Monkeybread. You can add pecans, or walnuts. You can add in roasted dry coconut shavings, or make a yummy white chocolate glaze to pour on top instead of the gooey caramel I made. For a more adult taste you could add a Tbsp of Rum or Marsala to the melted Butter. What ever your taste, your kids will have loads of fun getting messy, because this Monkeybread is so amusing to pull apart and eat. Even for Adults. Happy Eating!
