The Croquette Mixture, when dry, will be like lumpy airy clay. That texture is perfect. Roll the potato bacon mixture into Cylinders and place them on a tray. This tray will be placed into the fridge to dry out any extra moisture inside. I recommend leaving them over night, but if you don't have the time, an hour at the very least.
