
This Valentine's Day, I decided to make a plate of these for my family.
WHAT YOU'LL NEED: (One batch makes one 9×13″ pan worth – approx 2 dozen treats)
-7 cups Rice Krispies (or any generic brand such as Crispy Rice)
-1 bag (10.5 oz) mini marshmallows
-1/4 cup strawberry gelatin (the special ingredient that makes them so pink)
-1 stick (1/2 cup) of butter
-1 tsp vanilla extract
-vanilla frosting
-sauce pan over 2 quarts
-piping bag, or a ziplock bag
-1 9x13 glass pan
-cooking spray
-wax paper
STEP 1:
Melt the butter in the saucepan over low-medium heat. Add the bag of marshmallows and let it sit for about 30 seconds or so as it slowly melts. Stir gently. Add the vanilla extract and stir gently again. Then pour the Jello over the marshmallow mixture. Gently mix everything together.
STEP 2:
Once the marshmallows are partially melted, remove from the heat. The key to soft Rice Krispy treats is not overheat the marshmallows. Stir until the marshmallows are melted completely and lumps are gone. Use a whisk to completely liquefy your marshmallows, keep stirring until all white parts have turned pink.
STEP 3:
Add the Rice Krispies. Fold until completely mixed together. Once mixed, pour the mixture into the glass pan after spraying it with cooking spray. Use the wax paper to press down on the mixture to set it in place and even it out in the pan. Remove wax paper and throw away.
STEP 4:
When the treats have cooled a bit and set in place, take your frosting and place it in the microwave for about 40 seconds, just enough to melt it a bit. When melted, scoop frosting into piping bag (or you can always make a poor mans piping bag like I do by using a ziplock bag and forcing the frosting to one corner, then snipping the end of the corner off) then gently drizzle the frosting over the treats in whatever pattern you feel like.
Serve warm immediately, or keep refrigerated if you plan to hold onto them for a couple days, but good luck with that.
