This past Saturday, Anzo and I went out fishing at Rolley Lake and we caught some trout! I believe they're of the Cutthroat variety, as it's one of the two hatchery species that are stocked in the local lakes.

I know how to do it, but usually I am too squeamish so I have someone else clean the fish. Basically, everything is connected to the mouth and posterior, and if you disconnect the internals from these two points, and just scrape along the backbone, everything just falls out. Rinse it in clean water, and there you go.. Ready to chill and slice for sushi, or poach, bbq, fry, or cook however you want it.
