there are actually several, but Cortoises is the most commonly used in plot (tho luckly for force users it is a rare mineral, even back in the Old Republic era the best they could make on any large scale was weapons and armours with thin Cortosis layer that could stop but not disable a lightsaber beam)
tho at the end of the day, the best way to kill a Jedi is ironicly doing the opposite of going up close with a cortosis blade....simply snipe them, since lore makes it clear 98% of force users powers requires line of sight, a primitive, silenced sniper rifle and a good hiding spot.
Actually, i'd think it would be remotely detonated weapons, or weapons on dumb droids. I did notice the Line of sight problem with their attack and defense. an antique slug thrower would be more dangerous than a blaster (higher projectile speed, more preseved kinetic energy over distance). But still, all it could take would be a Mouse droid with a hand grenade. They did go up against a sniper in the second prequel, and that seemd to indicate some slight precognitive 'danger sense" so again default back to the explosives.
