I know the feeling - I went through a few years where escalated emotions and depression made me start ignoring my health. But I gradually realized that being hungry and tired and dizzy only made things worse, and I find cooking fun, so it helped in more ways than one. Make yourself something you really like and dig in. ;D
I love baking, too - breads and pastries are so fun to make. it's like magic... you put this weird looking pile of stuff in a box and half an hour later you've got a loaf of banana nut bread. Cakes are even more fun because you get to decorate them, though that's not exactly dinner material. ;)
Otherwise, omelettes are really fun to make because little things you do change them so much during preparation or cooking, and I enjoy grilling veggies or making shish-kabobs. Honestly though if you're looking for something tasty, inexpensive, and filling, crock pot meals like beef n veggie stews are fantastic. :)

mm.. grilled veggies are awesome, especially asparagus and zucchini :9 chicken kabobs are amazing too. i wish i'd brought my crock pot when i moved. i had a huge one, i love pork and beef roasts. with potatoes and carrots and onions <3

Maybe a crock pot's something to save up for then, too. ;) always best to give yourself options when it comes to food - if I notice I'm slacking on my diet I'll start making food ahead of time - keep some sliced veggies and chicken in the fridge so even when I'm too lazy to cook or in a rush somewhere else I can grab something. :P
