one of my favorites

you will need


2 cups flour
2 tsp baking soda
2 tsp cinnamon
1/2 tsp salt
1/2 cup butter or margarine at room temp
3 eggs
1 1/2 cups of sugar
1/2 cup vegetable oil
2 cups of mangoes (about 3)

1 10 inch cake pan (i used a spring-form) greased and lined with parchment
(super important this recipe has a lot of posture and is notorious for sticking)

preheat oven to 350 degrees

combine flour baking soda cinnamon and salt set aside

cream butter and sugar until soft

add eggs and oil

incorporate dry ingredients and fold in mangoes

bake for 50-65 minutes or until a cake tester/skewer comes out clean

let cool 10 minutes before unvmolding
