With the back of the duck, the skin will be pulled back and secured to cover the open cavity of the bird. It makes for a neater and nicer presentation. Remember to pat dry the duck with Paper Towels to make working with the Duck easier. Secure the wings next by pinning the wings to the body. Again, be careful not to stab yourself!
