Often, I feel it is safe to assume the fancying of the older games comes from old comforts, or remembering those first tender moments of game. It seems I agree with you though. Some of the bosses could have seen a bit more variety, and less focus on 'giant-in-armour' in the new one. Probably the 'megadungeon' that is the game world could have been a bit tighter too. Phalanx is still my favorite boss, methinks.
Agreed 100% with the choice in bosses. I wonder why they chose to do that? ( .__.)
Though, the one non-giant-knight-in-heavy-armor boss I fought early on in the game (I'm sure you've already battled it, just doing want to do potential spoilers, haha) was one of the cooler, if not still trivial compared to others, looking bosses. Was almost 2spooky

Yeah, I thought he was pretty cool.
I got a lot farther today - there's more areas than there's room for on the warping screen, and it starts to scroll down (NEAT).
Narrowing down my favorite Dark Souls bosses is hard, because I have to take into account the actual fight, their look, and lore and everything in between... off the top of my head though, Artorias & Ornstein, Seath, and the Gaping Dragon all stand out in my mind for various reasons.
I never actually "beat" DkS1 - I'd get to Gwyn, and make a new character so there would still be some mystery left to the game I love so much. I'm weird like that, haha
