Have you ever lost sleep because you can't keep from wondering what the armor pieces for wings would be called? No? Lucky you.
I finally decided that they'd be related to the ones for arms. So, pauldron became pauldron-volant (flight pauldron), shortened to pauldrant. Same for the rerebrace and vambrace equivalents. The last thin piece over the primary feathers is just French for "knife" because that's what it looks like and (if sharpened) would function like.
I think there may be a term for the plates over the tail, but I can't find a specific one anywhere. "Guardequeue" is just "tail-guard"... again, from the French, because that's where most armor and heraldry words come from.

Can't keep your head down the whole time during battle, and even so, it doesn't look like it would cover everything - there'd be a gap at the side. Also, for anything other than a charge, the head would need to be maneuvered to find vulnerable places of the opponent, or the throat could be exposed when rearing for a power strike. Finally, to look around for things like, say, a pegasus ambush from above, the head would need to be lifted.
IRL the horse's throat was protected by a series of lames that could slide over each other, or alternately, the lames were separated, but had mail covering the gaps. A couple of pictures here.
That said, the biggest vulnerability is probably those big, soulful eyes...

Yeah... BIG damn eye holes!
Okay, so I added a gorget. But they were still very rare in period. Most suits of barding didn't have them. Most horses wouldn't put up with them. I can sympathize: I never had a gorget that was worth a damn. Got hurt twice by the damned armor itself until I switched to a bishop's mantle.
